Apple & Cinnamon Tea Cakes


There is nothing quite like a “tea cake” to conjure up a picture of ladies in floral dresses sipping tea from bone china cups with a slice of apple tea cake on the side!  This is another variation of our Raspberry Vanilla Patty Cakes.  This recipe makes about 18 cupcakes or 2 bar tin sized tea cakes.

Apple & Cinnamon Tea Cakes
These Apple Tea Cakes are a variation of our Raspberry Vanilla Patty Cakes. Paleo friendly and can be made as 18 Cupcakes or 2 bar cakes.

  1. 3/4 cup coconut flour
  2. 3/4 cup arrowroot
  3. ¾ tsp baking soda
  4. 1/2 tsp salt
  5. 2 Teas cinnamon
  6. ½ cup sultanas (optional)
  7. 3/4 cup olive oil
  8. 1/2 cup apple puree
  9. 6 Tbs honey
  10. 6 eggs
  11. 2 teas vanilla
  12. 2 Apples, peeled, quartered and thinly sliced.
  1. Whisk oil, egg yolk, honey, apple & vanilla until fluffy.
  2. Beat egg whites to stiff peaks
  3. In separate bowl mix flours, baking soda and salt. Stir
  4. through sultanas if using.
  5. Mix the flours into the egg yolk mix and stir until well
  6. combined.
  7. Fold the egg whites into the egg & flour mix in 3-4
  8. batches.
  9. The consistency is very smooth & fluffy.
  10. Spoon into lined muffin molds or 2 lined loaf tins and
  11. place slices of apple on top.
  12. Bake for about 20mins at 160c
  13. Beautiful served with butter, kefir cream or sour cream
