Ginger Spice Cookies~ Gluten free
A wholesome cookie made with almond meal and sweetened with a little coconut sugar (which is one of the best natural sweeteners, not only for its extremely low GI, but also because it boasts the most minerals that are still retained due to minimal processing.) This is a modified version of the Ginger Snaps in Nourishing Traditions.
1 1/2 cups almond meal (or activated almonds blitzed in the thermo)
1/2 cup butter (softened)
1 cup true arrowroot (this can be hard to find, but most health food stores stock this- not to be confused with Tapioca Starch)
1/2 cup coconut sugar
1 egg
1 1/2 tsp ground ginger
1 tsp cinnamon
1/4 tsp nutmeg
pinch salt
Grind almonds into meal. Mix in remaining ingredients. Add a touch more butter if the dough doesn’t come together. It should be quite firm, not runny.
Roll into small balls and press flat with fork. Bake at 165degrees for about 20-25 minutes or until golden.
