Bonza Baked Beans
These baked beans are a variation of The Nourishing Traditions recipe. The important part of this recipe is pre-soaking the beans before cooking to make them more digestible and nutritious.

Pre-Soak
  1. 4 cups of small white beans (canellini or navy)
  2. warm filtered water
  3. 2 tabs whey*
Baked Beans Ingredients
  1. 4 cups of pre-soaked and cooked navy or canellini beans
  2. 2 tbs butter
  3. 2 med onions chopped fine
  4. 3 cloves of garlic crushed
  5. 1 cup tomato paste
  6. 3 tbs Tamari
  7. 3 tbs of apple cider vinegar
  8. 1/4 cup molasses
  9. 1/4 cup maple syrup
  10. 1 teas salt
  11. pinch red chile flakes (optional)
  12. 2-4 cups of chicken or beef bone broth.
Pre-soaking & pre-cooking
  1. Cover beans with whey and water, cover and sit on bench for 24 hours.
  2. Drain.
  3. Place in large pot and cover with water.
  4. Bring to boil and simmer until beans are soft when pressed between fingers. May take 1-2 hours.
  5. Drain when cooked.
Baking Baked Beans
  1. Melt butter in french oven style pot, fry onion and garlic until soft.
  2. Stir in rest of ingredients including beans.
  3. Add bone broth to cover beans well and mix in.
  4. Bake in oven at 180c for about 2 hours.
  5. Check at 1/2 hour intervals to stir and add water/broth if dry. Sauce will gradually thicken and slightly caramelise.
  6. When reheating to use beans you may need to add some extra water to get desired consistency.
