You’ll never eat rice any other way once you have tried this! This soaked brown rice is the perfect accompaniment to coconut curries, in soups and stews and it works well mixed through leftovers reheated for a quick breakfast.  The pre-soaking of rice is important for enhancing nutrient content, digestibility and absorption of nutrients and as a bonus enhances the taste.  Read more about preparing grains here.

Coconut Brown Rice
It will be hard for you to eat rice any other way once you convert to pre-soaking and cooking with a fat. Not only does this traditional method of grain preparation make the rice more digestible and nutritious it also improves the taste. Serves 5-6

  1. 2 cups brown rice
  2. 4 cups water
  3. 4 Tbs coconut oil
  1. Soak rice overnight in water and a dash of whey
  2. Transfer to a rice cooker
  3. Add water and coconut oil
  4. Cook until soft.
  1. You can use butter instead of coconut oil when cooking rice.
