Fantastic Fried Rice

The secret to a really impressive fried rice is putting plenty of veggies in it.  In fact, so much so, that the rice is really just an added extra to bulk up and stretch out the veggies.  We really love making our Paleo version of fried rice as basically the fried rice then becomes a total veggie dish and is not really fried ‘rice’ at all.  This is a go to option for us for dinner often when we have had a Royal Breakfast and a good lunch.  It also makes a great side to other asian meat dishes and serves well as a cold leftover lunchbox option.  It also is an easy reheat on a camping trip or night away from home.

Ingredients
  1. 3-4 cups of cooked brown rice or cauli 'not' rice (left over and cold is best as it dries out a little)
  2. 6 eggs
  3. 1/2 cup of ghee or coconut oil
  4. 2 rashers of bacon diced (optional)
  5. 2-4 cloves of crushed garlic
  6. 1 large onion finely diced
  7. 1 tbs of finely grated fresh ginger
  8. 2 carrots finely diced
  9. 2 zucchini finely diced
  10. 1 red capsicum finely diced
  11. 1 head of broccoli finely chopped
  12. 1 large handful of snow peas sliced
  13. 2/3 cup of activated sunflower seeds
  14. 2/3 cup of sesame seeds
  15. 2/3 cup of finely chopped wakame, dulse flakes or arame
  16. 1/4 cup of Tamari (or coconut aminos)
  17. 2 tbs of Mirin (or coconut nectar)
  18. 1/4 cup of cold pressed sesame oil
  19. juice of 1 small lime
Instructions
  1. Whisk eggs vigorously until fluffy.
  2. Heat 1 tbs of ghee in fry pan over medium heat and add whisked eggs.
  3. Allow to cook for a few minutes until firming around edges and bubbling.
  4. Flip and brown the other side. Don't worry if it breaks.
  5. Once brown and cooked through like a pancake, remove from pan and chop into strips.
  6. Heat 1 tbs ghee/oil in large frypan.
  7. Fry bacon until browned. Set aside.
  8. Heat remaining oil & fry onion for a few minute until soft.
  9. Add remaining veggies, garlic and ginger and stir fry on med. heat for 5-10 mins.
  10. Turn heat up to high and add rice (cauli rice), egg and bacon/ham.
  11. Stir to mix well. Add more oil if needed.
  12. When pan hot add tamari and mirin. Stir to combine.
  13. Turn off heat.
  14. Stir through seeds, wakame/arame & lime juice.
