Adaptable Apple Crumble

Originally inspired by Sally Fallon’s Apple Cobbler from Nourishing Traditions, this traditional ‘oldie’ is really a ‘goodie’.  Not often we have  dessert but if we do have this on a special occasion leftovers are a must. Rich with healthy fats and proteins it is marvellous served cold as left overs, and works well as a nutrient dense, satiating lunchbox addition.  

Adaptable Apple Crumble
Originally inspired by Sally Fallon's Apple Cobbler from Nourishing Traditions, this traditional 'oldie' is really a 'goodie'. Not often we have dessert but if we do have this on a special occasion leftovers are a must. Rich with healthy fats and proteins it is marvellous served cold as left overs, and works well as a nutrient dense, satiating lunchbox addition. This recipe can be altered to give you versions of Apricot, Rhubarb or Pear crumbles.

Ingredients
  1. 8 Pink Lady/Golden Delicious or Granny Smith Apples
  2. 2 tbs of lemon juice
  3. finely grated rind of a lemon
  4. 1 tbs of true arrowroot
  5. 1 tbs of rapadura or coconut sugar
  6. 1/2 tsp of cinnamon
  7. 3/4 cup of crispy almonds
  8. 3/4 cup of arrowroot flour
  9. 6 tbs of butter or coconut oil cooled and cubed
  10. 1/4 cup rapadura or coconut sugar
  11. pinch of sea salt
  12. 1 tsp vanilla
  13. 1/2 cup of shredded or flaked coconut
  14. 3/4 cup of coarsely chopped activated nuts (recommend macadamias, cashews or walnuts)
Instructions
  1. Peel, core and slice apples into thin wedges.
  2. Toss apples with lemon rind, arrowroot & cinnamon.
  3. Spread apples in base of a greased small baking dish.
  4. Grind almonds to a meal in food processor.
  5. Mix in sugar, arrowroot, salt and vanilla.
  6. With motor running gradually add butter (coconut oil) until just combined and mix forms a mass.
  7. Remove from processor and stir through coconut and nuts.
  8. Press over Apples.
  9. Bake in mod. oven for about an hour. You may need to cover top to stop burning half way through.
  10. Serve with some cultured cream or home made ice-cream.
Flavour Variations
  1. Apple & Apricot = substitute some fresh apricots halved for apples.
  2. Apple & Rhubarb = Substitute some chopped rhubarb for apples.
  3. Orange Scented Apple & Pear = Substitute lemon rind and juice with orange rind and juice. Use half pear and half apples.
