Run run as fast as you can, you can’t catch me I’m the ginger headed man!  Baby number 5 of 5 was born with red hair and this is how we read him his fave story about the Gingerbread man.  So, a bit of trivial information but these are undoubtedly the best gingerbread men we have ever tasted, and guess what?  They are paleo friendly which means they are refined sugar free, grain free and dairy free.  We have adapted this recipe from The Nourishing Home.IMG_4556

Little Ginger Heads
Paleo friendly, delicious gingerbread men. A great treat for Xmas or Easter!

Ingredients
  1. 2 tbs of coconut oil
  2. 2 tbs of coconut nectar
  3. 1/3 cup of raw honey
  4. 2.5 cups of Almond Meal
  5. 1 Tbs. of ground ginger
  6. 1/2 tsp. of cinnamon
  7. 1/8 tsp ground nutmeg
  8. 1/4 tsp baking soda
  9. 1/4 tsp sea salt
Instructions
  1. Blend together coconut oil & sweeteners.
  2. In a separate bowl combine almond meal with spices, salt and baking soda.
  3. With beaters or processor running, slowly add flours to wet mix until it comes together like a dough.
  4. Wrap in glad wrap and place in fridge for an hour until firmer.
  5. Roll out between two pieces of baking paper until about 4mm thick.
  6. Cut our Gingerbread shapes.
  7. Place on tray lined with baking paper.
  8. Decorate with dried fruit and or nuts (cranberries, sultanas)
  9. Bake at 180c for about 15 minutes or until evenly golden.
  10. Allow to cool on trays.
