Coconut Chicken Soup
This is an easy and nourishing meal that provides a abundance of healthy fats. With a few staples on hand, like chicken broth, coconut cream and some veggies this meal can be put together very fast and the best thing is it can feed little crew. To stretch it further serve with some cauli ‘not’ rice or some coconut brown rice.

This is an easy and nourishing meal that provides an abundance of healthy fats. With some basics on hand, like chicken broth, coconut cream and veggies, you can prep this quite fast.
Ingredients
- 2-3 cups chicken stock
- 400ml coconut cream
- 1 large carrot diced
- 1 zucchini diced
- 1 cup of corn kernels
- 1 handful of finely shredded kale
- 4-5 chicken thights (poach chicken thighs in coconut cream first) or can use any left over cooked chicken
- 1 tbs finely grated fresh turmeric (optional)
- 1 teas finely grated fresh ginger (optional)
- Sea salt/pepper
- 2 teas dulse flakes
Instructions
- Fry up the diced carrot in coconut oil
- Add turmeric & ginger and stir through
- Add corn and cook for 2-3 minutes
- Add stock, cover and simmer until carrot is tender
- Add diced zucchini, kale and other veggies (if they take longer to cook, add at beginning)
- Stir through coconut cream
- Simmer for about 10 minutes with lid on
- Add 1 tsp sea salt, pepper and dulse flakes.
- Check for taste and add more salt if needed
- Stir through cooked chicken and coconut brown rice (optional).
- Soup will be hearty and delicious
